Bosnian Beans Stew- A Healthy Makeover

I wrote this article in German for the lovely spiritual lifestyle blog from Berlin: Fuck lucky go happy. I will not be able to translate the article into English or Serbo-Croatian, but at least I’ll translate the recipe for you.

This traditional beans stew is very popular in Bosnia, but it is made with a huge amount of meat, sausages or bacon. A true comfort food from my childhood. Anyway, I decided to give it a makeover, so I adapted it to my diet- healthy, simple and tasty! In Bosnia, people would ironically call this meatless way of preparation- “a beans stew from hospital”, but this only means this meal can heal you!

Healthy Beans Stew from Bosnia

Ingredients (4 Persons):

250 g white beans (soaked over night in a double water amount)
1 medium sized onion, finely chopped
1 small (yellow) pepper, finely chopped
2 medium sized carrots, finely chopped
1/2 of a small sized celeriac root, finely chopped
1 small sized parsley root, finely chopped
3 cloves of garlic, finely chopped
1 medium sized chili pepper, finely chopped
1 tsp paprika powder
10 peppercorns (if possible in different colors)
3 bay leaves
5 juniper berries
2 tsp salt
2 L vegetable stock
pink pepper corns for garnish

Directions:

1. In a larger pot place onion, soaked beans (washed and drained), juniper berries, bay leaves and salt and pour everything with 2L of vegetable stock. Bring to boil and cook, partly covered,  for 30 min on high temperature.
2. After 30 min. reheat the temperature on medium and add pepper, carrots, celeriac, parsley, chili pepper, garlic, and paprika powder. Cook until the beans are very soft and stir once a while. Add more water if necessary. (If stew start to become too thick.)
3. Serve hot and garnish with pink peppercorns. This stew fits the best with a piece of black bread and some (homemade) pickled cucumbers or cornichons.
